Chopped onion, leeks, butternut squash. 20 mins sweating in a pan with melted butter, low heat.

In goes vege stock and a splash of milk, mainly for the colour. 20 mins on a low heat

Take off heat & blend, stir through some finely chopped chives and heat through for a couple minutes.

It's really nice, sweet and creamy flavour from the butternut squash with the distinctive leek taste behind it. Little chilli powder for a tiny kick if you fancy it.

Probably the best tasting soup I have ever made.

Hard to say..I don't measure stuff...perhaps a 'glug' :lol:

It is roughly 1 litre of stock though.
