Home Made Healthy Green Veg and Barley Thick Spicy Soup.

Reason: I'm not getting enough green veg, it's low calorie and I saw some pearl barley, lentil and vegetable Mix in Waitrose that looked nice.

How to: Pour half pearl barley into pot with 2 1/2 pints of boiling water water plus a pinch of salt and a tablespoon full of garlic powder. Also add two stock cubes (low salt) and a generous amount of pepper.
Add a Table spoon of hot sauce that you like ( I used Encona - I didn't want it massively hot, just to add some spice) and then a tablespoon of paprika.
Add a squirt of tomato puree. Cook for 10 mins.

Add Green veg cut finely - for me it was Mange tout and small brussels.


Cook slowly for another 10-20 mins (depends how you like your veg - longer for softer) and then let it stand for 5 mins so the barley et al is thoroughly cooked and a lot of the water is absorbed.

Reheat for 1 min on high.

Serve up hot.

Result: low calorie, healthy soup full of fibre, vitamins and some minerals.

Mind was bloody gorgeous and I have enough left over for tomorrow :)

Last night I ended up with sausage, bacon and egg toasted baps.

Tonight I will do some more home made burgers with salad.

The homemade burgers last night were spot on. Lean beef mince, finely sliced onion, garlic, ginger, chilli, sage, corriander; salt & pepper, chilli pepper. Mashed together in a bowl and bound with an egg. Slowly fried in a pan on a low heat. Finished of with sliced gherkins, tomatoes, green salad and curried mayo inside wholegrain baps.

Tonight I am going to do pork and caramalised onion sausages with creamy mustard mash and some fresh veg. Bit of gravy on the side.

Got in to Tesco Metro at lunch and had a brain wave....I will now be having the sausages with sweet potato wedges instead.

Got a fry up tonight (4 sausages, 4 bacon, 2 eggs, beans, tomatoes, chips (would be hash browns but they have all vanished somehow, ARGH!!!!!)

You know what, I ****ing love this thread. I don't get dinners like this anymore and it really puts me in a mood for anything you guys mention. Not sure why I love it then really! Just a nice feeling when steak and onion pie shows up or something else never found in these parts. :thup:
