I've been getting good advice from DasNutNock's friend and also a few Texans on the bbq circuit and buying the best possible meat. I've got 4 more briskets in the fridge to try and some Creekstone USDA beef ribs.

Where's your takeaway in Brentwood? My lad moves there in a few weeks so thought we would try it out!

You're not running the restaurant anymore are you?

This thread has inspired me to replace my old cast iron chiminea which collapsed with rust this winter with a proper BBQ :thup:

Hi HD, it's 253 Ongar Road.

No I left the restaurant about a month ago and having some time off now, the sale still hasn't gone through yet though.

Let me know when you are around this way and I will arrange for your meal on me, the 3 biggest sellers are Cod, Jack Daniel's Ribs and JD Chicken Fillet Burgers.

just used the weber sear grate for the first time properly
:thup: from me , got it to 300C 6 minutes max, perfect medium rib eye

I did a feast the weekend for a few freinds.

A 6lb pork shoulder went on at 730 am, followed by 4 racks of ribs at midday. I then popped out for a few hours hoping that my fuse method would work as its the first time ive used it. Got home at 4 the pulled pork was at 195c and the bbq still burning nicely at 260c.

Took off the ribs and pork to wrap and rest and chucked to whole chickens on the rotisserie.

About an hour later the chickens were cooked to perfection and guest arrived to a feast. Compliments all round for the food, and i must say it was the best bbq ive ever done

Sounds lovely :thup:

I might attempt my first long cook/smoke on the bbq this weekend. My method for the coals/heat is to first put down some unlit coals, and then add lit coals on top of these. Would this be sufficient to keep it going for a few hours after I have adjusted the vents for the right temperatures etc?

Its the first time ive used the fuse method and it worked a treat. I used weber briquettes and lit the bbq at 715am and it was still burning nicely at 430pm,

Went outside this morning at 7.30am to feed the birds and it started snowing on me and now it's blowing a ****ing gale !!
