Re: the dinner thread
I do like a pot roast, as it goes, but topside does better “normal” roast. I do have a big thing of brisket I’m going to pot roast next week thoughFreeWheeling wrote:Pink or low and slow Dan
I prefer mine low and slow cooked in red wine , onion on the top , bit of rosemary

Re: the dinner thread
I just throw the lot in one of those oven bag things, roast beef comes out on a low and slow falling apart but still has all the moisture as its been sealed in all the wine and juices
contents of the bag make a cracking jus too

Steak & Ale pie, mash & cabbage with plenty of gravy and brown sauce, washed down with a pint of Guinness.

Re: the dinner thread
Was a boneless leg from Waitrose that my mum bought in January but wasn’t well enough to cook, so went in the freezer. Once I’d shoved a bulb of garlic and a pile of rosemary in it and a good amount of seasoning, I was very pleased with the result. I’d guess that it was British lamb - it’s the New Zealand stuff that tends to disappoint.cockney hammer wrote:just has not got that lamb taste anymore god knows why
I’d still rather get hogget, though.

Re: the dinner thread
Oven roasted sweet potatoes covered in ground Chill and smoked paprika rub, plus Quinoa cooked with Garlic, chives and dill, a huge "hot Salad" with roasted beets, brown rice, asparagus, toms, cue, carrots and olives with a drizzle of dairy free light mayo and olive oil.
All washed down with a few bottles of Sauvignon Blanc from New Zealand and France.
All food cooked by my lovely sister's hand as a reward because I spend the evening round there editing and adding the finishing touches to her essay that had a midnight deadline.
The food was bloody fantastic, that girl can really cook.

Chorizo & Chilli risotto last night with Mascarpone and a tonne of Manchego in it.
Spatchcocked a chicken last night and have it marinating in peri sauce and will do fake nandos rice and salad with it tonight.

Shepherd's pie awaiting. Which is good, because I'm hungrier than a Scouser that's just found a dead rat in his bin.

Re: the dinner thread
The missus is going to make a beef madras tomorrow with the approx 1kg remaining roast beef leftover from Sunday.
I'm trying not to get my hopes up too much for something she's not attempted before, but the last time she tried an off the cuff curry with left overs it was a Biryani with left over lamb which was sensational, so she better pull it out of the bloody bag this time too.
