Very true Warp. That’s always been my arguement and is how recipes evolve and new ones are made.
I’m just pointing out how Italians feel about these traditional dishes.
There is a recipe book from a few hundred years ago where all these recipes were collated and it was decided that they were the definitive versions.
My partner btw is Italian and a professional chef and food historian and who has worked at top restaurants and now works privately for the rich and famous in London. You should see her face when I say the same as you to her. “Yes I’m using bacon and no it’s not proper ‘carbonara’ but it’s still tasty and you’re still eating it and enjoying it, what’s the problem?”
If I knew how to post photos, there’s a couple of good bits of Street graffiti from Rome.
One says: ‘Carbonara without guanciale is like celebrating a baptism and forgetting to take the child’
Another says: ‘he who doesn’t eat amatriciana is a son-of-a-bitch!’

My partner's Italian too, ( nightmare innit?) my kids have dual nationality. Their family restaurant is one of very few non chain Italians left in W1.her younger brother runs It now, but Remo still spends winter in Uk, so turns up to mutter incomprehensibly , scowl at customers he doesn't like, and add a bit of authenticity.

I do, because pecorino tastes much betterwarp wrote: if i can't find guanciale and pecorino romano but i have some good pancetta and parmesan, who ****ing cares!
Having said that I have no problem getting hold of pecorino romano. Guanciale though is highly annoying, that annoys me.

Never heard them called spears before are they the tops of sprouting broccolli? If so ....delicious.
I've just harvested a kilo of sweet potatoes in an old pedal bin, I was going to make some crisps out of them, any other ( not indecent) ideas would be appreciated.

Made some pork meatballs out of a pack of pork mince , one stock cube , one egg and a packet of ' Asda Extra Special Roasted Garlic , Sage And Red Onion Stuffing Mix ' - made 15 good sized meatballs - cooked in my own tomato sauce recipe they were surprisingly delicious .

Mrs MM slow roasted a large joint of beef brisket in red wine overnight, which we had with roast potatoes, yorkshires, chilli parsnips, peas, broccoli and cauliflower cheese, carrots and green beans. Amazing.

Tofu satay + rice. Was pretty nice, actually - baked the tofu pieces first, so they went nice and crunchewy and the satay sauce I made was tasty and quite light.
